Spring Forward into March Madness





Just like that we are back into spring time. Spring forward and set your clocks! Thank the Lord we get an extra hour of daylight, means summer is just around the corner. Baseball season is back, the flowers are blooming, and we get an extra hour of sunsets. We have had a busy start to our Spring and are looking forward to Lexie and Addsion coming home for wedding season. Mom and Dad plan to take a trip up to Northern California for my grandfathers 85th birthday and are looking forward to getting back to some Padres games very soon. We hope this change of season finds you well. A great time to check in with your New Year's goals as we are entering the second quarter of 2022. We wish you all a healthy and happy Spring! 




Restaurant Review - Nectarine Grove 





















SO GOOD. I will rave about this place forever. Fresh, healthy food, that tastes just like the naughty stuff. Everything on their menu looks delicious. They have gluten free, dairy free, vegan options. Open earlier, a great spot for Sunday brunch or a lunch meeting. Located off the 101 in Encinitas, they offer indoor and outdoor seating, craft coffees, and draft alcohol also available! My personal favorite is the crispy chicken salad! Can't wait to go stop in for brunch.

Workout of the Month - Getting Outside! 

With Spring here, it is the perfect time to take workouts outside and get some Vitamin D at the same time. Love killing two birds with one stone. Here is a workout you can do out on your driveway, while vacationing on Spring Break on the beach, or when you take a quick lunch break from sitting at your desk all day to get out and move your body! 











1 mile jog/run OR .5 mile walk 

25 reps x 4 rounds = 100 rep challenge 
- prisoner squat 
- push ups 
- reverse lunges 
- tricep dips 

1 mile jog/run OR .5 mile walk 

Have fun with this one. Grab a family member, friend, or co worker. Try completing in the least amount of time. Record your time and perform once weekly seeing if you can improve each time! 




Recipe of the Month - Protein Pancakes 





So simple and protein packed. One of my current post workout brunch options or even better my favorite right now, breakfast for dinner! 








I like to buy the protein mix from either Trader Joe's or Costco has a bigger bulk one. Their are options for minimal to the maximum amount of protein. 
My personal recipe right now is: 
- 1 C protein mix 
- 1/2 C almond milk 
- 1/2 C water 
- 1 -1/2 scoops of vegan vanilla protein powder 
- 1 egg
- 2 TBSP dark chocolate chips 

Stir up the ingredients drop in the chocolate chips and use a 1/4 C measuring cup to pour the batter into a greased pan. Flip when the bubbles begin to form. Top with my favorite bananas and honey and enjoy a sweet start to your day!
