Happy Holidays friends and family. We hope you have enjoyed the holiday season.  Many of us are fortunate enough to spend this time of year with the people we love near and dear, but some of us do not get that luxury.  Reach out to those who need some holiday cheer, put their needs before your own and your blessings will come in ten fold.  The holiday's are not about how much you gave or how much you get, they are about how you give and how you receive.  Live your days full of love and spread light to all who cross your path.  As a family and as individuals, we are blessed to know you.

This Christmas brought my sister and I home to our loving parents and cute dog Bailey the Beagle.  We couldn't be happier. Just missing our big brother, Addison, this Christmas. He spent time with his girlfriend's family in Miami, Florida.  This was the first time without Addison during the Christmas Holiday since birth and we missed him dearly. It was a busy time for mom and dad as they hosted four gatherings of family, bible study group, and business associates.   Our family hopes you had a blessed year.  Thank you for being our friends, family and clients in 2018.  Reflect, improve, set your goals high and adjust.  We hope to visit soon.

If you're from Carlsbad, you know what Board and Brew is. Being away from the beach, sun and family is hard- but being away from the holy grail of Gluten Free Turkado's is even more difficult.  Board and Brew has all the goods and you can never go wrong with their secret sauce- always ask for extra by the way.  My favorite is a Gluten Free Wrapped Turkado, and the veggie supreme is a close second. You can get wraps, salads, sandwiches and beer. They use fresh ingredients and make the sandwiches right there. It literally never disappoints. Surfish 

Image result for surfish brooklynSurfish is located in Industry City in the Brooklyn Borough.  My roommate and I stumbled upon this Peruvian seafood cuisine when we were walking home from the gym. Seems right, right? We decided to give it a try- and it was da bomb!  The atmosphere is casual but cozy. There is a bar and dining room seating.  The food is authentic and out of this world delicious. I got the Parihuela, which included clams, shrimp, squid, mussels and fish in a spicy tomato based broth. It was amazing, if you're not allergic to shell fish of course.  We also ordered the fried plantains which were sweet and savory all at once.  This place also serves crispy baked plantain chips with a spicy dipping sauce, it's their spin on chips and salsa.  Hands down one of the best and most hearty meals I have had in Brooklyn. If you ever come visit or are in the area, you HAVE to go.

New Year, New Work Out Routine

With the New Year approaching I'm sure we are all starting to list off the things we wish we had done in 2018, and we've also started to list off what we hope to accomplish in 2019.  Start small, and expand from there.  According to this website, the most common goal for 2018 was to eat healthier and workout more. I'm sure that is still the top goal for 2019 as well.  So how can we approach the new year with those goals in mind? Like I said, start small.  Each morning get moving! Whether that be taking a walk, going for a jog, riding your bike, hitting the swimming pool or hiking, there's so many options! Drink water throughout the day and make conscious decisions when it comes to food.  We so often eat what is available, or whatever is in front of us.  Think before you eat. It seems so simple but can be so difficult for some. Picture yourself with your goals accomplished, think if the small decision will help you get closer to that person you want to be, or further away.  Each day we have the opportunity to refresh and recharge- approach each day with a positive attitude and your goals will happen!

As we conclude the year of 2018, I encourage each of you to revisit your investments and goals.  I have written and accounted for my goals since 1996 and still have that original document in my planner.  It is amazing how blessed I am as I reflect on some of the goals that our family accomplished, some of the goals we still strive for and some of the goals I am still trying to figure out.  Each month Jenifer and I sit and update our goals for immediate / weekly, 1 to three month goals, annual goals, and 5 year or long term planning goals.  Most of them have been accomplished.  Some we are still working on and some need to be re written or revised because of failure.  Don't be afraid to fail friends and family.  Failure sharpens our skill level, sharpens our character and sharpens our ability to adjust to be successful.  As for your investments, conservatively speaking, check your net worth total compared to last years.  Where are you?  Do you need to adjust your allocation in order to meet your goals ?  How did they perform ?  Are you getting closer to retirement and need to tone down the risk ?

If I can advise on one item, maximize your ability to save to your ROTH or Traditional IRA's.  Did you know that limits on contributions have increased?  Check your income if you qualify.  If you are 50 and younger, you can invest $500.00 a month or a total of $6000.00 per year into an Individual Retirement Account.  If you are 50 or over, you can contribute a total of $7000.00 per year.  I always strive to fund my Roth IRA because of the possibility of my money coming back to me tax free on the gains while withdrawing.  Try investing slowly each month rather than a lump sum.  This is called dollar cost averaging and you buy during the highs and the low's of the market.  Over time, this has proven to be a very conservative and prudent approach to saving for retirement.  Remember that Social Security was never meant to be the only source of income for an individual or couple during retirement.  For some couples, including my own parents, it is.  I would love to provide any type of review for you, your insurance portfolio, your savings, your life.  As always, peace and love in 2019 from our family, The Domingo's to yours.  Have a blessed New Year.

Happy Holidays Friends and Family!


Happy fall and hello all! I am writing to you from Brooklyn, New York.  We got our first snowfall of the season not too long ago.  I was a little nervous to be experiencing the cold for the first time, but it wasn't thaaaat bad.  However, I do miss that California weather so much. Can't wait for our Winter Break to come home and visit my family.

Our hearts hand heavy as this tragic disaster hits our beautiful state.  Thoughts and prayers to those families who have been left with very little, for those who have been left with nothing and to those who are out there helping in any way they can.  Please call our agency to make certain that your home is properly covered to the replacement value. Also, review if you have any jewelry, fine art or articles that are not typically insured as personal property on your home insurance policy.  If you are not insured with our agency and the Farmers Insurance Group, have a review with them to see if you have any gaps that should be filled with proper coverage.  If those not effected by the fires can just pray and think positively, donate or volunteer, our world will be a better place. 



Holiday Cheer



On a much sweeter note, November is the start of the holidays for many of us.  Family, work and friendly parties are starting to pick up, and most people love this time of year.  I know there can be a lot of pressure during November and December... pressure to make the right dish, to include everyone, to purchase the right gifts and food, the list could go on and on.  As this season of life continues to come forth, I think we all need to remember what the holidays do so beautifully for each of us.  They bring people together.  It's never too late to extend an invitation, or to even back out of a function in order to have some time to yourself and your family.  Season self-care is so important.  So, with all your stress of the winter months, don't forget about yourself and the ones that love you most.

If you are planning on being guest at multiple parties, save yourself some time by doubling your recipes and treats, kill two birds with one stone.  You can then laugh with any of your friends that are joining the same parties because they will like your recipe or treat even more the second time around.  



Recipes of the Month

Super Easy Creamy Mashed Potatoes 

- lb. bag red, russet or sweet potatoes
- 1 cup bone brother (any kind)
- 1/4 c. butter
- chives, salt, pepper to taste

Fill a large pot with potatoes and water. Bring to boil and let cook until fork tender.  Transfer potatoes into a large mixing bowl and begin to mask. Add in the butter and the bone broth while mashing. Top with pink sea salt, pepper and chives. 



Smoke Salmon Sweet Potato Bites

- 1 sweet potato (cut up into medallions, roasted with no oil at 400 for 30-40 minutes)
- goat cheese or cream cheese
- smoke salmon 
- chives, dill, salt, pepper to taste 

Roast the sweet potato medallions from 30-40 minutes at 400 (little to no oil). Let potatoes cool for a few minutes. Then top with choice of cheese, top with smoked salmon and then garnish with herbs. I get all my ingredients from Trader Joe's with my sissy.




Vacation & Travel Tips

This cold weather has me itching to drive up and down the coast of California.  I read this article and it made me miss home so much. If you and your college students have a long Christmas break, read this and plan a road trip.



Many of us do travel home for the holidays, whether it is by train, car or plane- the holidays force us to be on the move. Traveling can be extremely taxing on your social-emotional health and your overall well-being.  It is important to have a few travel tips up your sleeve.
  • Drink WATER. Being in the air will dehydrate you like crazy so drink up before, during and after.
  • Essential oils (lavender, spearmint, lemon- they will calm you)
  • Ear plugs or ear phones 
  • Travel pillow and blanket (keep cozy)
  • Fruits and veggies (adding more fiber will definitely help with that travel bloat and constipation)

I recently went up to Newburgh, NY with my roommate to visit his hometown.  Although it’s just 2 hours from our small Brooklyn apartment- it felt like we were going to another, much calmer state.  Driving through upstate New York during the fall is just as you would imagine. The colors are big and beautiful, the people are friendly, the atmosphere is quiet and relaxed, and the food is amazing.

Since visiting the first time, I have been back to the same small town diner for three meals.  The Alexis Diner has it all! They have some huge serving sizes from all over the globe. Freshly made desserts like cakes, cookies and pies.  Breakfast is served all day, and they are open 24 hours a day. All sorts of people seem to go there. There’s an elderly population, several families, several young adults.. Basically everyone eats there. If you ever happen to randomly end up in Newburgh, NY you NEED to go eat here!

With the ever increasing peril of fire in California, I wanted to personally encourage each of our clients, friends and family to make certain they are consciously looking for fire hazards near or around the home.  Sometimes the not so obvious hazards lurk on the side of the home. A empty gas tank, a pile of scrap wood. Our vibrant and great insurance company, The Farmers Insurance Group of Companies has been in the front lines of the fires in Paradise and Malibu. Farmers has waived the evidence for inventory on the total losses of homes and have been paying our policyholders and clients the policy limits of their personal property coverage. Farmers has also lifted the $5000 limit on smoke and soot damage to the affected wild fire areas.

1. Make certain to review your home insurance policy to add any upgrades or added features of your home. Our clients and friends want their home insurance to provide the proper coverage. The replacement value and not the appraised value.
2. If you have any high value art pieces, heirlooms, furs, jewelry, make sure you add them as floaters or endorsements to your policy. A basic home insurance policy has small limits on the mentioned items.

Fall Fever

Happy October friends and family! We are excited to welcome in the fall season and the cooler weather.  I am writing to you all from Brooklyn, New York.  Although I am no longer in California, I am learning and developing life and business skills and I'm here online to share some October news with you.  

Farmers News

As a lot of you know, our agency is very involved with the local middle and high schools in Carlsbad, CA.  At the start of the school year, we began planting and harvesting from our garden project with the Calavera Hills Coyotes.  A while back we donated some supplies and helped build a small community garden with Mr. Bob Burns's 2nd graders.  Since my move, my mom and dad have been taking care of our Calavera Hills School visits and photos.  Seeing them makes me really appreciate them, and our small community in Carlsbad. Here are some pictures of the most recent visit with the elementary Coyote's.






Recipe of the Month

Here in Brooklyn, the temperatures have finally dropped and I'm experiencing my first fall. I know back in California it's probably sunny and warm... but this fall drink is good for you no matter where you live.

Golden Milk Elixir:  There are several versions of this drink, and it's been all the hype for a couple years now.  I swear by it.  The ingredients create a warming drink that looks gold and shiny.  You can sip it throughout the day or have it as a night time treat.  Because it's homemade, you can really add or subtract whatever ingredients you want!  Here is my go-to golden guy...

  • 1 -2 cups non-dairy milk (I use unsweetened almond or make my own hemp milk) 
  • 1 - 2 tsp. turmeric 
  • 1/2 tsp. ground ginger ( or thinly sliced fresh ginger)
  • stevia to taste, or maple syrup (for sweetness) 
  • cinnamon to taste 
    • Just heat all these up in a small saucepan and stir often.  You can add in coconut butter or oil to make it super rich and creamy, or collagen to get that latte feel. This is such a great dessert drink when you add in the natural sweeteners! 

Fitness News 

The youngest Domingo has been working hard to get back on the field for her senior year of softball.  Although there are still challenges ahead, we couldn't be more proud of her tenacious spirit.  Amanda continues to excel in her field of exercise science.  She took on an internship with Verizon Wireless' corporate office as a personal trainer intern this semester.  She's leading private sessions with the employees and group classes like spin, yoga, and HIIT.  Her favorite health tips for the change of seasons are...
  • stay hydrated!
  • listen to your body: if you are feeling under the weather, do not push yourself, it's your body saying I need a break 
  • Meal prep! The last thing we want to do when we're tired from a long day is cook a meal and do all the dishes too. Plan ahead and be prepared. One pot meals are great for cold weather too!
  • Walk.  If you sit during the day, take a walk break. 5 minutes is better 0.

Family Fun and Commitment of Love 

This year was Randy and Beverly Fruechting's, aka, Mama' and Pop Pop, 50th Wedding Anniversary.  The family celebrated the momentous occasion with a nostalgic gondola ride in Belmont Shores and dinner afterwards on 2nd St. Although they have been together much, much longer than that, 50 years of marriage quite a testament to their love and commitment to each other and have been a wonderful example in our marriages.  Here's to many more!

Remember that marriage and life are marathons, there will be hills, peaks and valleys.  Just know that you climb and go longer and farther together.



Restaurant Review 

National Thai - located in Brooklyn, NY on Fulton Street

National is a small, cash only thai eatery.  It's tucked away, so hidden you might miss it if you're walking on the busy Brooklyn streets.  This place is a gem! They have the best red curry sauce and such a fresh thai salad your mouth will water.  The ambiance is nice and very relaxing, it's a calm place for being in such a crazy city.  My all-time favorite food is curry, so of course, my all-time favorite dish from National is their red curry.  I always ask for extra veggies and no rice with my dish, and they don't charge extra. Their specials change all the time, so there is something new to experience almost every time I go.  If you are ever in the neighborhood or are visiting me or sissy- we'll take you here! You truly can't go wrong.

Ample Hills Creamery- located in Brooklyn, NY (many locations)

Image result for ample hillsAn ice creamery that will take your breath away.  Ample Hills was founded in the spring of 2011 by Jackie Cuscuna and Brian Smith.  Ever since the opening, they have been selling out of flavors daily.  Each flavor has something different and dreamy to offer. They have vegan options too! My favorite flavor is the Vegan Chocolate, but Gowanus takes a close second.  You can get sundaes, scoops, pints, the choices are endless.  Your stomach will hate and love you all at the same time.  You can even order online if you're a mega foodie with a strong sweet tooth. Some flavors are seasonal, and all are fan favorites.  Next time you're in Brooklyn stop by the Ample Hill on Nevins Street. Roof top ice cream bar that never disappointing,

5 most Expensive Cities in the World & City Traffic 

Carlsbad has it's pricey places. The nice restaurants, entertainment, alkaline water... it all adds up.  And rent is not cheap nearly anywhere these days.  After moving to New York I miss those pricey Carlsbad places. I miss the simplicity of life Carlsbad lives by.  New York is expensive, it's no secret.  But after reading this article, I found out the 5 most expensive cities to visit in the world.  Take a look!

Along with the most expensive places to visit, I also wanted to see which cities had the worst traffic.  I sat in a car for three hours on Monday in order to travel 70 miles from upstate New York to Brooklyn.  LA traffic is unbearable, but the New York State commute is honestly horrendous.  I can not believe so many people do it every day.  Thank God for public transportation (I can't believe I just said that..ew!) Check out the cities with the worst traffic here.

Benefits increase

Social Security recipients will get a 2.8 percent cost-of-living adjustment (COLA) in monthly benefits beginning in January. The average individual retired Social Security beneficiary is expected to see a monthly benefit jump from $1,422 to $1,461. The estimated monthly increase is $39, or $468 a year.

Earnings limit climbs

If you are between ages 62 and 66 or 67 (full retirement age) and working while receiving monthly Social Security benefits, you may now earn up to $17,640 before the Social Security Administration will deduct $1 for every $2 you earn. In the year you turn your full retirement age, the earnings limit will be $46,920 before the agency will deduct $1 for every $3 you earn until the month you reach full retirement age. (For those born between 1943 and 1954, full retirement age is 66. It increases by two months for each year after until 67.)

Tax cap grows

Taxes on workers’ wages finance Social Security. Workers pay 6.2 percent of their earnings to fund the benefit (employers pay the same). Next year, the maximum amount of earnings subject to the Social Security tax will increase from $128,400 to $132,900.

Work credit earnings rise

The earnings required for one work credit — that is, three months of Social Security coverage — edges up from $1,320 to $1,360 for 2019. Credits are the building blocks the Social Security Administration uses to determine whether you qualify for benefits. You can earn up to four credits a year if you earn at least $5,440. In most cases, to qualify for benefits you’ll need a minimum of 40 credits.

Supplemental Security Income up

Beneficiaries receiving Supplemental Security Income (SSI) will see an increase in their monthly payment. SSI is a federal program that aids the aged, blind and others with disabilities who have little or no income by providing them funds for food, clothing and shelter. The individual amount grows $21 a month, from $750 to $771. The amount for couples rises $32, from $1,125 to $1,157.

To check the amount of your 2019 Social Security monthly benefit, go to SSA.gov, and, if you already have a My Social Security account, sign in and check your account’s message center. To create a My Social Security account, go to www.socialsecurity.gov/myaccount. So far, about 35 million beneficiaries and non-beneficiaries have set up My Social Security accounts.

Getting back to the routine of Learning and Growing, Recheck and Adjust the Year!


As summer comes to an end, we celebrated all the summer birthdays, had a little family "stay-cation" when Addison and Lexie came home for a week, and enjoyed our time in the sun and in the water. Now we are all officially back on the east coast. It is always hard to leave the west coast and the place we are fortunate enough to call home. Addison made his way back to Pittsburgh and Lexie and I are back in Brooklyn. Lexie will be going to grad school in the fall and teaching at a school in Brooklyn starting in September. I will be going back to Brooklyn for my senior year of school and will finally be playing softball. As for the empty nesters, mom and dad are looking forward to putting more time into the business and many projects around the house. I'm sure it won't be too long until they come out to visit! As always, we hope you had a very relaxing, enjoyable, and safe summer!





Trending Recipes 

Apple Cinnamon Overnight Oats:



1/2 C Dry Oats
1/2 C Milk of Your Choice
1/4 C Plain Greek Yogurt 
1/2 Apple Chopped 
1/8 TSP Ground Cinnamon 
1 TSP Honey
1 TSP Chia Seeds 







Combine and stir the oats, milk, and yogurt. Top with desired apple cinnamon toppings. Drizzle honey and sprinkle chia seeds on top. Seal and place in refrigerator overnight. Easy on the go hearty breakfast for the next morning. 





Pita Pocket :


4-6 oz. Cut Grilled Chicken Breast 
1 TBSP Feta Cheese
1/4 Sliced Cucumber
1 TBSP Hummus of Your Choice or Cucumber Yogurt 
Chopped Red Onion
1 TBSP Olive Oil 





Combine onion, cucumber, and cheese. Mix together in a bowl with olive oil. Cut pita in half and create a bowl. Spread hummus or yogurt inside the pita pocket. Cut chicken and place in pita pocket. Top each pocket with ingredients mixed together in the bowl. Enjoy as an on the go lunch or dinner!

It's always too short when we're all together. We had a nice week together at home hanging at the beach and being surrounded by family and friends. We celebrated all the summer birthdays Addison turned 24, Lexie turned 23, and I finally turned 21. The boys went golfing for a day and placed some bets at the Del Mar Racetrack. We all can't wait to be back home again, but for now we will enjoy our time on the east coast.

This workout can either be done at home or in the gym. Just requires some 10 pound dumb bells and the motivation to get going. Let me know if you give it a shot, hope you enjoy! It will only takes about 20 minutes to complete this full body fat burning workout.

Complete each exercise for 40 seconds on and rest for the remaining 20 seconds of the minute. Complete all 6 exercises 3-5 times depending on how you are feeling. Go get sweaty! 


Back 2 School: Dorm Room Essentials 


With school starting up again, I thought I would share some essentials that I found very useful over the last few years. I know being in a dorm room is not always the most luxurious thing in the world, but you just make it work with what you got.

1. Easy to prepare foods.

Some of the essentials that I always try to have on hand are oatmeal, protein bars, & nuts. They require little to no effort to make and are great if you are in a rush or between classes. They also have a fairly long shelf life.

2. "Cooking" Utensils  

In order to make tea, coffee, heat up noodles, or make oatmeal I discovered having an electric tea kettle or a keurig can really help make a difference. You can use it for multiple things and I'm sure you'll be drinking some kind of caffeine much more than usually. Also, having microwavable dishes on hand like mugs, bowls, and plates will make your life much easier. If you don't like doing dishes or have no place to wash them off paper is another easy option.

3. Comfy Lounge Wear 

I rarely find myself wearing "normal" clothes unless I have to. Spending time in your dorm room means comfy clothes all the way. Whether it be a big t-shirt, a pajama set, or some big baggy sweats you've loved forever, comfy lounge wear is where I invest most of my money because I use it all the time.

4. H20

I always bring a reusable water bottle. Most schools have places to fill up. You will find yourself spending a lot of money on water if you don't use one of these. Helps keep you focused in class and staying hydrated is always good for overall health.

5. Storage and Such 


Depending on what kind of storage your room always has, it is nice to have easy accessible storage bins that don't take up the space in your whole room. I find most of my storage at Target for pretty cheap and it has lasted me all of college. Don't forget a full-length mirror! You always have to see how your outfits looking, even if it is just some lounge wear.

Wow, how amazed at knowing that I have three kids that are making their way in this world.  I edited this months blog and was so proud of how my daughter, Amanda, created this forum for our clients, friends and family to get news and updates about us, news and updates about our agency and news and updates about bettering peoples lives.  

Our Creator has given us gifts to honor Him.  Thank you Lord for my clients, family and friends.  Thank you for this business and the ability to protect and educate our clients, family and friends about insurance.  Thank you for allowing Jenifer and I to take care of my mom and sister and the means to provide for our family.  I always ask for my clients, friends and families prosperity, peace and protection.

With a reduction in commission to help our Mother Company Farmers, stabilize rates and to create a more efficient service experience for our customers, our family has taken a pay cut of about 11% overall.  What would you or your family do if you received a pay cut this large ?  We have had a budget for many years.  Each of our expenses is broken down and listed on an excel spreadsheet.  Jenifer and I will be evaluating our budget again and look for areas to cut out 11%.  We will have to reduce savings for retirement.  We will have to reduce our entertainment and dining budget.  We will have to reduce areas in the home that are excess, such as premium movie channels, car washes and other services we can accomplish ourselves.  We can increase our deductibles on our insurances and evaluate switching over to liability only on older cars.  When there is a will there is a way.  Discipline in spending and saving takes time and patience.  My point of this exercise is to try to write down what you spend, where you spend it, how you spend it and is it necessary or a want.

The beginning of the school year is a very busy time for the agency.  Many of our clients re evaluate their expenses and start planning for the new year.  This is a great time to re evaluate  some of the goals you set for the year.  This is also a great time to make adjustments to goals and your budget.  Remember that a visual goal is more attainable then a wishful goal.  Right it down, measure it and make adjustments to meet it.  Then onto the next improvement in your life.  Thanks for listening.  As Always, please call, text, email, facetime or visit with any questions or concerns.  Have a great school year and fall season.

Why July 

A great time to review your annual goals and adjust to meet them !!!!

Summer is half way over already and I can't believe how fast it has gone by. We look forward to Lexie and Addison coming home next month and can not wait to see them and spend a week together before all of us are back to the east coast. The month of July has been quite eventful for the Domingo's. We celebrated the 4th of July and Mama Fili's 82nd birthday and Addison's 24th birthday. We took a quick trip, Addison pitched in his last collegiate career baseball game, and now we are getting ready for everyone to be back home for a week next month. We hope all of you are enjoying the nice weather and are having a safe and fun summer. Below we have another monthly workout, coffee restaurant review, and some tasty treat recipes.

I know it is not the typical restaurant review, but this is by far my favorite place to get coffee when I am home. It is located right off the 101 in Encinitas. Not only do they have amazing coffee, but the tea is just as good. Some of my favorites are the Tesora, Mint Mojito, and Philz Iced Tea. If you are down by the beach, crusing by the coast, or looking for a delicious pick me up, Philz will not disappoint. Their unique atmosphere matches the unique way they make every cup freshly brewed and just to your liking. Feel free to pair your drink with some of their pastries or avocado toast, yum!




Catalina "Staycation"

Due to everyone's hectic schedule and all us kids living on the other side of the country, we decided to have a little "staycation" right here in California. We took a day trip this month to Catalina Island and just enjoyed some sun and played tourist for the day. Living here my whole life I had never been to Catalina.  The trip was quick and fun and I definitely could have stayed longer. We took a golf cart all around the island where we got to see some amazing views. We ended our trip relaxing on Descanso Beach.

4 Ingredient Banana Bread


The simple banana bread I can't stop making. It satisfies my sweet tooth without leaving me feeling stuffed and bloated. The best part about it? All it requires is four ingredients. Grab those over ripe bananas you were going to throw away and get baking.

What You'll Need: 

4-5 Ripe Bananas Peeled
1 Cup of Peanut Butter
2 Cups of Dry Oats
1 Cup Dark Chocolate Chips

How to Make and Bake: 

1. Combine bananas, peanut butter, and oats into a blender or food processor.
2. Blend ingredients together until you get a thick, cream like consistency.
3. Mix in the cup of chocolate chips.
4. Line a 9in x 5in. bread baking pan with parchment paper.
5. Pour in the "batter".
6. Bake @ 350 degrees for 25-30 min.
7. Allow bread and pan to cool before cutting, unless you can't resist. It is very tasty warm!

Flourless Chocolate Avocado Cookies 

What You'll Need: 

1 Ripe Avocado
1/4 Cup Maple Syrup
1/2 C Nut Butter (Peanut, Almond, Sunflower)
1  Whole Egg
1/2 Cup Unsweetened Cocoa Powder
1  TSP Vanilla Extract
1/4 Cup Dark Chocolate Chips

How to Make and Bake: 


  1. Preheat oven to 180 C (360F)
  2. Cover a baking sheet with parchment paper. Slightly oil the paper with 1/2 teaspoon of liquid vegetable oil (coconut or peanut oil) . This will prevent the cookies to stick to the paper. Set aside. 
  3. In a food processor, with the S blade attachment, add ripe avocado and liquid sweetener. Process for 30 seconds until it forms a creamy avocado batter with no lumps. 
  4. Stop, add egg, nut butter and cocoa powder. Process again for 30 seconds. Scrap down the bottom and side of the bowl and process for an extra 15 seconds to make sure all the batter is combine - no lumps.
  5. Transfer the chocolate cookie batter onto a mixing bowl. It will bit moist and sticky that is what you want. Stir in chocolate chips and vanilla - if used.
  6. Combine with a spatula until the chocolate chips are evenly incorporated. Test the batter and adjust with 2-3 drops of liquid stevia - only if you want a sweeter cookie. 
  7. Prepare a small bowl with warm water, dip a spoon in the water and use that spoon to sample some chocolate cookie batter from your bowl. The water will prevent the batter to stick too much to your spoon.
  8. Spoon the chocolate batter onto the baking sheet - I used another spoon to push the batter out of the first spoon.  Use a silicon spoon or spatula to flatten the cookie into a cookie shape. The batter won't stick onto silicon which makes it easier to spread.
  9. Repeat until you form 6 jumbo cookies. Those cookies won't spread so you don't need to leave more than half thumb space between each.
  10. Sprinkle extra chocolate chips on top of each cookies if you like.
  11. Bake for 12-15 minutes or until the center is set. 
  12. Cool down 5 minutes on the baking sheet then transfer onto a cooling rack to cool down.
  13. Store the cookies in the fridge for up to 5 days in an airtight container.

Focus on the Long Term Goals


My Friends and Family, 

Well, another milestone was accomplished by the Domingo Clan.  We all now have ROTH IRA's.  I have been a saver, not the best, but I did stay consistent.  My father opened a fund for my sister and me when I was 18 years old.  I saved $25.00 per month until I had to use the funds to assist paying for college.  I told myself that when I had a family, I would encourage each of the kids to start saving when they were young.  Having each of them open a ROTH IRA is a great feeling.  A feeling that they understand the importance of taking care of yourself and your future.  This is a savings vehicle that is optimal when not touched until 59 1/2 or longer.  It is also one of the few tax free options on growth of your money if properly funded.  What our kids have on their side is time.  They have time to withstand the ups and downs for the stock market.  

Just a friendly reminder if you earn income of at least $5500.00 and you are 18, you can start saving $5500.00 on an annual basis.  That is $458.33 per month.  You can start off with just $25.00 per month if you want.  If you are age 50 or over, you can contribute up to $6500.00 annually.
