April 2020

Happy Earth Day

We hope everyone is staying safe and healthy at home. We are grateful to all be healthy and blessed to be able to provide our services for each and every one of you. Alexandra and Addison are still on the east coast. I decided to come home as soon as news broke in New York that we might be on a lock down. I did lose my job and have been able to stay busy by creating my own brand which is kinda cool. We understand times are tough right now, but it is a great time to slow down and realize what is really important in your life. We hope all of you are staying safe, staying healthy, and staying home. We look forward to re-connecting face to face when we can.

Today Specifically, is the 50th Anniversary of Earth Day.  What is it :

The State of the Earth Report is a data-driven portrait of US air, water, and environment. Celebrate the 50th Earth Day by staying informed on the biggest environmental issues. Unbiased government data. Our nation, in numbers. Non-partisan.

Here is a link for the data.  The State of the Earth by the numbers:

Know that the world is resetting the Earth because of the reduced usage of fuel for commerce, transportation, and vacation, many areas around the world are seeing improvements with clearer water, smog free views, and regeneration for some of our eco systems.  Lets stay positive as we are Staying at Home and learn lessons on how we can preserve our planet for generations to come.

Easter at Home

Definitely an Easter to remember at home. It was not the typical church at the beach and brunch in the Domingo household. We watched church online at home, went for a Sunday afternoon walk, and cooked dinner. Mom did make me an Easter basket that took me an hour to find HAHA. I blamed it on the fact that I just moved back home and I am not too familiar with the house. The importance of Easter to our family is the root of our Faith.  The Creator coming down in human form living with us and sacrificing His life to pay for our sins in order to have an eternal spiritual life.  I know my father and mom truly believe this Faith has saved, grown and blessed our family.  We hope you enjoyed your Easter and or Sunday this year.

It's Bananas During This Time

Baking and banana bread have been especially popular during this quarantine. I have always LOVED bananas and of course I had to make my own "healthier" version of banana bread. It is super easy, a great pre workout bite, dessert, and only 4 INGREDIENTS.

-4-5 ripe bananas
-2 C rolled oats
-1 C nut butter (I love almond butter!)
-1 C chocolate chips (I use Lily's dark chocolate bar and chop it into small chunks!)

Pre-heat the oven to 350 degrees. Lightly grease or spray (I used parchment paper to line) a 9x5 loaf pan.
Throw bananas , oats, and nut butter into a blender. Blend until the consistency is smooth enough.
Pour in the desired amount to chocolate chips and stir to mix into the batter.
Pour mixture into the baking pan. I like to top it off with extra banana slices and chocolate chips!
Place in the oven for 25-30 min.
Enjoy with a glass of almond milk!

Take Out

Coming from a family of a small business, we are very fortunate to still be able to work during this time. We are trying our best to support the local Carlsbad businesses during these tough times. Here are a few of the local shops and businesses that we have been ordering from.  Below are links to their on line ordering

Board n Brew

I suggest the "Turkado"!Super yummy, I always get it on a gluten - free wrap, no mayo, no cheese! Another healthy option is always their green salad. Nutrient dense, protein packed and super filling! https://boardandbrew.com/

Mikko Sushi

Conviently located right down the street from us, we are regulars at this place. Sushi is one of my favorite foods! They have a killer salmon skin salad that is enough as a side to feed my dad, my mom, and I. Also a big fan of the Carlsbad and the protein roll!  http://www.mikkosushi.com/

Baba Coffee

I have been doing something on Snapchat called "coffee reviews" as a small way I can help small businesses in the area. It sprung because one of me and my sister's favorite things to do in New York is walk around the city and get a cup of coffee on the weekend mornings. I took this back with me to Carlsbad and started visiting local shops here then rating them on taste, texture, and temperature. Baba Coffee got an overall 7.4 rating!  https://babacoffee.com/

Our Current Watch List

-All American (Netflix)

I got super into this show and binge watched in like 3 days...
-Billions

My mom loves this show! Think about big New York money here. New season is coming soon so a great time to get up to date.
-This is Us

A true family show. Always gets me in my feels.
-Grey's Anatomy

Contains 15 seasons. My dad is not a huge fan of this drama, but my mom and I have been able to watch every night. I re-started this series because I knew it could last the whole quarantine with the hundreds of episodes.

Don't Stop Movin'

Just because the gyms are closed does not give you an excuse to Netflix and chill the entire quarantine. It is good to get up and move even if you are working from home! The benefit is you get to roll right out of bed and workout in the comfort of your own home.

Check out my Instagram @kiki.domingo for some workouts that can be done anywhere with no equipment necessary.

I have attached a link below for you! Give it a try, tag me, and #KickItWithKiki.

Workout with me!
