Christmas Morning |
Can you believe it? 2021 is already over! I swear this year just flew on by. We hope each and every one of you had a wonderful holiday season filled with love, laughter, and joy. We know this year was not the typical holiday season for many of us, but we hope you were able to share it with some of your loved ones. As I reflect on 2021, one word that really spoke to me this year was gratitude. I think the past year or two really put in perspective just how much I have to be grateful for and to take the time to really recognize it. With 2020 being such a huge shock, we thought we would have a better grip in 2021, but maybe we just needed to shift our perspective and practice a little more gratitude for what we are still able to do, what we can still accomplish with everything "out of the norm", and learn how to make the best with the situation at hand. With that being said, we are now more than ever so grateful for all the support from each and every one of you friends, family, and clients. Our family has been truly blessed with an amazing business because of all of you. We want to take the time to wish you all and your families a very Merry Christmas and a prosperous New Year.
New York Adventure
Finally made the trek back to the big apple just in time for some Christmas spirit. Right before the new outbreak, I took a trip to the city to visit my sissy before the holiday. Luckily, I got to see Lex because she happened to get COVID right before she was supposed to come home for Christmas. We frolicked around in the city acting like tourists, decorated her super cute and chic apartment, and indulged in all our favorite foods!
New Year, Better Me
"I have a New Year's resolution, but never stick to it." Hmmm...sound familiar? Don't worry I was like you too. Sometimes goal setting can be intimidating, sometimes it's exciting, and sometimes we don't ever do it at all because we are afraid to fail ourselves. Here are a few tips I have found helpful while goal setting for the New Year:
- Break up your goals into sections. Whether it be monthly, 3 month, 6 month, and 1 year, or by category such as: health & wellness, personal development, financial, etc.
- Set goals with a distinct timeline.
- Recruit an accountability partner
- WRITE them down then place them where you can see them each and every day.
- Remember consistency is key. Goals aren't achieved over one night. They are achieved in the small daily tasks each and every day. Stick with it, allow yourself some wiggle room, and have fun with it!
My dad has been setting goals since 1996 and he has his original list. Its amazing how good you feel when you do check them off the list. Continue to plan your life goals and always remember to patt yourself on the back when you accomplish one of them.

Holiday Recipe
A little healthier, just as delicious holiday treat to break and bring! These gluten free quinoa and rolled oat date bars are SO yummy and pair great with morning coffee or an evening sweet tooth!
DESCRIPTION
- 2 1/2 cups whole pitted dates
- 1 1/2 cups water
- 1 1/2 cups gluten-free rolled oats
- 1 1/2 cups quinoa flakes
- 1 cup almond flour
- 1/4 cup coconut sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 1/2 cup natural almond butter
- 1/2 cup maple syrup
- 1/4 cup coconut oil, virgin, cold pressed
INSTRUCTIONS
- Pre-heat oven to 350F. Lightly grease a 9-inch square pan and line the bottom and sides with parchment paper.
- Add the dates and water to a medium-sized sauce pan and bring to a boil. Reduce heat and let simmer for 7-8 minutes, or until the dates have softened. Towards the end of the cook time, start mashing the dates with a fork which helps absorb any remaining liquid. Cover and set aside.
- In a large bowl, whisk together the oats, quinoa flakes, almond flour, coconut sugar, cinnamon and salt.
- In a small microwave safe bowl, add the almond butter, maple syrup and coconut oil and microwave on two 30-second intervals, stirring in between and after until smooth.
- Add the wet mixture to the dry ingredients, and stir until wet and crumbly.
- Press a little over half of the crumble mixture into the bottom of the prepared pan.
- Spread on the warm date filling.
- Sprinkle on the remaining crumble mixture and press it lightly into the date filling.
- Bake for 28-30 minutes, or until the top is golden brown. Let cool completely on a wire rack.
- Using the edges of the parchment paper, lift the date squares out of the pan and cut into 16 pieces.
- Store in an airtight container at room temperature for 2-3 days, or in the refrigerator for 6-7 days. Freeze for up to 3 months.
A Note from the Agency Owner
For over 25 years I have learned, studied and practiced my craft of insuring our clients, their homes, automobiles, business's and lives. I have purpose in my life as we nuture, grow and retain the clients we have earned. I continue to learn the art of insuring money with the Annuity Product and hope we can connect in 2022 to discuss ways to insure your money or create a life long income stream. With the ability to see my clients grow, flourish as well as retire, I am honored to assist in providing peace of mind and security. Without our friends, clients and family, we would not have an insurance agency to open each and every day. Without a very competent staff, we would not be able to grow and retain our business. Without a reputable company such as the Farmers Insurance Group, we would not be able to plan, save and look forward to a healthy retirement.
From our entire family, staff and our hearts, thank you for your continued support and trust in our family insurance practice. Domingo & Associates, Farmers. Your Agency For Life !!!
