Back to School
It seems like just yesterday we were spending our time playing sports, going to the beach and doing everything in between together. It's an odd feeling, becoming an adult. I find myself longing for those times my siblings and I were just kids with little responsibilities. Growing up with Addison and Amanda is, and always will be the highlight of my life. Having two best friends with me at all times is a comfort that I can not describe- I'm sure many people with siblings know what I am talking about. Being out of school and in the working world with my parents is a leap into adult hood that I keep wondering if I am ready for. Like I said, I find myself longing for the life of a kid again.
Being reunited with my brother and sister made this summer the best one. They both continue to encourage and support me in everything I do. It's been our first summer together in a long time- and it felt like we were just kids again.
As they both get ready to embark on another year on the East Coast, I can't help but feel a little sad. But at the same time, I am flooded with emotions of pride and admiration. I know we are all ready to enter a new chapter in our individual lives. I know each of our paths are starkly different, but interwoven at the same time. Being so close from a young age has made all three of us learn the importance of kinship, and that is what brings us together.
Each day I am reminded of what it means to put someone before myself, because of them. At times there are things few and far between that can be described as concrete or unbreakable. Thankfully our relationship is one of those few things. Cheers to a great summer with my best friends. I love you and will miss you both so much! -Lex
Staying Healthy @ School
Getting back into the school day groove can be very hard after a fun summer. Some tips I follow when I'm away on the East Coast goes as follows:
- Drink LOTS of water!
- Walk or bike to and from campus
- Prepare your meals and snacks so you're not caught in a bunch having to go out and purchase a meal
- Stay positive and stress less. Reaffirm why you are doing what you're doing- keep your end goal in mind
These are super easy to keep top of mind as the school year starts up for many of your siblings, children, friends or yourself. Focusing on these things, plus my school work, also distracts me from how much I'm missing my sis. Happy Schooling! - Amanda

Restaurant Review
One of the best parts about living in downtown Carlsbad (besides the beautiful beaches) is the ability to walk and get a meal or a drink. There are several foodie filled places to eat in this little beach town. Things from specialty burgers, sandwiches, pizza and tacos. And if you're a healthy eater- they have several options for you too. The trending lifestyle around the world is high density plant-based meals. With Carlsbad being a health crazed hot spot, you can find many plant-based options to fit your needs. Summer heat seems to always have me craving something light and refreshing. A favorite spot of ours is Choice Juicery. They specialize in juice (hence the name), but have a wide variety of smoothies, bowls, salads, desserts and more. My favorites are the "Mint Chip" bowl and the "Spicy Suntuna Salad". Both are very light, very refreshing and full of flavor. Next time you're in the are, be sure to check them out!

Recent Recipes
Here are some of our summer time favorite recipes. Made for dipping, dressing salads, or complimenting a hearty veggie wrap. Enjoy!
Spinach Avocado Dip
- 1/2 c. blanched spinach leaves (cooked then squeezed and drained)
- 2 ripe avocados
- 1 crushed garlic clove
- 1/4 c. chopped corriander
- 3/4 c. dairy free coconut yogurt
- 1 tbsp. lime juice
- 3 tbsp. avocado oil
- 1/2 tsp. sea salt (to taste)
- 1 tbsp. avocado oil to drizzle on top
It's great with chips and veggie sticks- plus, there's plenty for sharing!Put all ingredients and blend in a food processor (or blender) until desired texture.
Curry Dipping Sauce
- 1/2 c. raw cashews, soaked and drained
- 1 1/2 tbsp. red curry paste
- 1 tbsp. coconut aminos (or soy)
- 2 tbsp. lime juive
- 1/2 tsp. garlic powder
- 1/2 tsp. red pepper flakes
- 1/2 tsp. ginger
- 1/4 c. water
For something a little bolder and full of flavor, try this with roasted veggie fries. Place all the ingredients in blender and blend on high until smooth and creamy.
