January 2021

10th Year at The Farmers Insurance Open



I don't know about you, but this month has flown by! Although it feels like we rolled right from 2020 into 2021, I still have high hopes for this 2021 year. Not much has changed here for us. My parents are still working away, Addison is out in Pittsburgh working on his business, Lexie is working virtually teaching in New York, and I am still home working as an Orangetheory Coach while I navigate getting accepted into nursing school. We hope you have had a healthy start to the 2021 year. We look forward to hopefully being able to get together with you all in the near future. 

The Farmers Open 

It's that time of the year again, the PGA tour's Farmers Insurance Open. A golf tournament hosted by Farmers Insurance, located at the beautiful Torrey Pines golf course. Every year, my dad invites friends, family, and clients to enjoy a few fun days on the course. It may look a little different than usual this year, but everyone still had a blast and enjoyed a little "staycation" fun. 





We were fortunate enough to be able to stay at the Torrey Pines Hilton for the weekend and enjoy the tournament from our room balcony.  The hotels grounds leads up to the 18th green so watching and enjoying the closing hole was fun from beautiful gardens.  No tickets were available because of the pandemic, but we made the most of it.  We celebrated our friends Noah's birthday and a 32nd Anniversary for our dear friends and clients, Greg & Christina Adnams.  Most importantly, we followed and respected the safety guidelines to not offend any of the other guest and players.  It was fun to stay at the same hotel as the pros.  We said hello to Xander Schauffele, rubbed elbows with Bubba Watson and hooted for Phil as he waved to us on the sidelines.  Looking forward to 2022 with a physical presence on the course.  






Restaurant Review 


Jay's Gourmet Pizza & Seafood 

This month's restaurant review is located in downtown Carlsbad at the heart of the village, right next to Carlsbad Pipelines surf shop. My parents have a date night once a week, and lately they have been enjoying picking up a takeout meal from a local restaurant. They have a ton of options including all your favorite Italian dishes, soups, salads, and desserts. They do have a kid friendly menu as well! They are open for takeout and outdoor dining. Gluten free pizza and pasta available at your request! Below as a link with the menu attached for you to check it out yourself. 

 


Creating a WFH Space You'll Love 



With many of us Working From Home, working out at home, and or schooling from home, it is so important to create a special space for optimal working conditions. Here are a few tips I find to be helpful: 

1. Pick a space with some natural light. If you don't have that space available, make sure your working area is well lit and bright. 

2. Try to declutter your surrounding space. Free up some space and make sure your desk is nice and tidy. 

3. Keep water near. It is easy to want to reach for more snacks while we are working and sometimes working under stress. Always stay hydrated to avoid any "bored" or "stress" eating. 

4. Get yourself a small house plant. Whether it is real or fake it will really aesthetically add to your space. Make it an area you are proud of and want to escape to. 

5. Have a comfortable chair that creates a proper posture for yourself. Or invest in a standing desk so you are not sitting all day long. 

I would say just make sure you designate a space that is just for work. Once we start mixing where we eat, sleep, and relax with our work environment it can become stressful and overwhelming to the point where we feel as if we don't have a place to just relax and not associate our personal space with work. What are some tips you have for managing the work from home life that is now becoming our new normal? 



Recipe of the Month - Spaghetti Squash 

If you are looking for a yummy way to get some extra veggies in for yourself or your family; or maybe you are looking for a healthier pasta alternative, this is a great option! Super simple and easy to make. Preheat the oven to 400 degrees. Cut the squash in half and lightly drizzle olive oil throughout each half. Add salt and pepper to taste. Flip over on a baking pan, skin side up. Poke 4-5 fork holes throughout each half. Place in oven and allow to bake for 30-40 minutes. 


Take a fork to fluff the squash to make it into the spaghetti like texture. Feel free to add ground turkey or beef and some red sauce or maybe some shrimp and pesto! For a fun display and arrangement cooking and mix all other ingredients you want then place the spiraled squash back in the shell and enjoy!  


Marathon Run! 


I did accomplish one of my New Year's resolutions early this year. I was able to complete my marathon run! I have never been a runner in my entire life, I mean cmon man, I played softball, the most we run is 120ft max. When quarantine first started I was struggling with feeling like I was stuck in the same boring routine and I wanted to step out of my comfort zone. Running is something I've never really considered myself decent at. I looked up a novice training program online, and just kept running. I have found a new love for running and am pretty damn proud to have ran 26.2 miles all by my lonesome.  Set your goals high for 2021, I did, and now get to check it off my goals list for the year.
