March 2020

Truly a "March Madness" in 2020

As we all try to cope with the Corona Virus, isolation, abundance of time and fear, our hope is that this event will quickly pass and our lives return back to normal.  This event will certainly change the way our consumers and industry will conduct business in the future.  My favorite method of conducting business is face to face.  If you do have the technology to face time, skype or zoom, let us know and we will accommodate.  Many of you already enjoy talking on the phone or like to conduct business by email, fax or text.  We will be linking our toll free number to texting by the end of the month.  Our agency is open to protect you and give you peace of mind.  We are praying daily for our family, friends and clients that the impact on our economy is not to much of a burden on you.  If you find your policy in a Notice of Cancellation, please call and we will apply for an extension.  Remember, our agency would not be in business without you, our client.  You are the lifeblood of our agency.  Enjoy the read from Amanda "Kiki" Domingo and me.  God Bless you all.


Already marching into Spring time! It feels like yesterday, we were just home for Christmas break. Excited for the weather to warm up here in New York. Lexie and I have been keeping busy and really trying to work on some new recipes to share with you guys. We both have transitioned into some newer roles at work and are excited to continue to work on our health and fitness. Lexie took a visit home this past month and we are looking forward to getting some San Diego sun in the future. Don't forget to spring forward and get to sleep a little earlier!



Restaurant Review 

The Plot - Plant Based 

Image result for the plot oceansideMy parents went to a new restaurant based in Oceanside, CA this past week. They are not plant-based, but are interested in exploring it and the health benefits that it can offer. The Owner and Chef of the Plot, Davin Waite write up is below.

Davin Waite began his career as a sushi chef at Ichiban in Santa Barbara under the instruction of Chef Hiro, a local legend and master of sushi as well as French and Italian Cuisine.  Back in North San Diego County Davin continued on to Cafe Japengo, and in 2003 he returned to his hometown of Oceanside to co-find The Fish Joint.  With his next project, Davin created a restaurant in his own image; scrappy, irreverent and constantly pushing boundaries.  Wrench & Rodent Seabasstropub began as a pop-up, but quickly became a destination for those who appreciated Waite's creative and delicious approach to minimizing waste and celebrating local and sustainable sourced products.  Waite aims to stay in a state of consistent innovation and creation in order to teach and inspire.  Davin has taught sustainable cooking techniques to elementary students, culinary students and city officials.  He has spoken on panels on topics including the underutilized species and sourcing from local farmers.  In 2017 Davin was a keynote speaker at the California Resource Conference, where he broke down a whole fish on stage to demonstrate how each part can be used to make delicious menu items, down to the ribs, skin and marrow.  Waite's menus reflect his values as he continues to evolve as a chef and as an advocate.  Waite has continued his culinary evolution in the direction of plant based cuisine.  He gives veggies the respect they deserve in a playful and creative way, and welcomes the challenge of creating stunning and delicious culinary offerings with plants.

Shrimp "Fried" Rice 

We are always looking for alternatives when it comes to health and cooking. We made this super simple, quick, and tasty cauliflower fried rice as one of our meal preps this week. Takes only 20 minutes and is a great healthy alternative.

Ingredients: 
1 bag riced cauliflower 
1 bag frozen mixed veggies 
1 bag small shrimp 
1tbsp coconut aminos (soy sauce alternative)

How to: 

Heat cauliflower over skillet until it almost becomes clear. Add the mixed frozen veggies and allow to simmer until cooked. In another pan, cook shrimp for 5-7 min. Add the coconut aminos to the cauliflower and mixed veggies. Once the shrimp is cooked, mix in the pan. Feel free to add some hot sauce or red chile flakes for a little extra spice! 

Spring Cleaning

Lex and I have been making a cautious effort to stay on top of our cleaning habits. We try to clean out our things seasonally. Here are some tips we try to follow to keep our teeny tiny apartment looking in tip top shape! 

1. Do the dishes as soon as you make food. Allows time for digestion and you don't have to deal with the pile up! 
2. Wipe the kitchen and bathroom counter down as you go, 
3. FOLD the laundry when it is done. We are definitely bad about this one. It saves so much space to just fold when your clothes are dry. It also saves time when you are looking for a particular shirt you "swore you washed..." 
4. Get rid of the clothes you're saving for that "one time". I can bet, you'll probably never wear it. There are plenty of places to go donate. Some like H&M even will give you 15% off your purchase for trade ins! 
5. Keep fresh food in the fridge. We try to clean the fridge out every week when we do our grocery shopping. This keeps us only buying what we need and fresh foods.


International Women's Day

On March 8th we celebrated International Women's Day. Just want to give a shout out to all the hard working women out there. Especially to our own mom who puts so much time and effort into this business and our family. We would not be able to accomplish half of the things we have without her endless support and wisdom. Make sure to give all the women in your life a little extra squeeze, we don' thank them enough.
